I always find it hard to eat the amount of vegetables that are recommended per day!! Yesterday, while I was cooking dinner, I had the bright idea to add some vegetables into my meatloaf! I diced green peppers and carrots and noone even noticed they were added! I do think they added some extra flavor in there! My goal is to try this with other meat dishes.

This is one of my favorite go-to dinner recipes. It is both healthy, simple, and SOO good!!! I found it on pinterest a few weeks ago!
Combine chicken broth,
beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin,
cayenne pepper and salt in the crock pot.
CROCK POT SANTA FE CHICKEN
Recipe From: skinnytaste.com
- 24 oz (1 1/2) lbs chicken breast
- 14.4 oz can diced tomatoes with mild green chilies
- 15 oz can black beans
- 8 oz frozen corn
- 1/4 cup chopped fresh cilantro
- 14.4 oz can fat free chicken broth
- 3 scallions, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp cayenne pepper (to taste)
- salt to taste
Season chicken
breast with salt and lay on top.
Cook on low for
10 hours or on high for 6 hours.
Half hour before
serving, remove chicken and shred.
Return chicken to
slow cooker and stir in. Adjust salt and seasoning.
Serve over rice

So I'm very new at this blogging thing but I went to a conference and the speaker got me excited to start one! I am a Senior Dietetics student at the University of Northern Colorado and I love food! I hope to provide fun facts and nutritious recipes that are yummy!!
